Ingredients
Green Bean Fries
- 2 Tbs. olive oil
- 1lb. fresh green beans, ends trimmed
- 2 large egg yolks
- 1/4 cup whole wheat flour
- 1/4 cup grated Manchego cheese
- Salt & Pepper
- 1 tsp. garlic powder
- 1 tsp. paprika
Yogurt Dill Dip
- 1 cup greek yogurt
- 1/4 cup vegan mayonaise
- 1/4 cup chopped dill
- 1/2 tsp. garlic powder
- 1 Tbs. lemon juice
- salt & pepper
Directions
Green Bean Fries
- Preheat oven to 425° F. Line baking sheets with aluminum foil, and drizzle with olive oil
- Place green beans, egg yolks, and oil in bowl. Mix with hands until beans are evenly coated. Add the flour, cheese, salt, garlic powder, paprika, and pepper. Toss to coat.
- Spread green beans on lined baking sheet. Bake for 20-25 minutes. Until golden brown.
(While the fries are cooking, prepare the yogurt dill dip)
Yogurt Dill Dip
- In small bowl, whisk together yogurt, mayo, dill, & garlic powder, lemon juice, salt & pepper.
- Place in refrigerator until fries are done baking. Use for dipping.
