Beets are a tricky ingredient. What do you put them in? How do you make them taste good…well, you can try making a bright beet hummus! It’s really simple and packs a punch of nutrients. With only 7 ingredients, the only prep necessary is to make sure you roast the beets ahead of time in the oven for a few hours. They should come out tender, and easy to cut through.
You can put your hummus on a sandwich, in a bowl of veggies and chicken, use it as a dip with crusty bread, or any other way you would use regular chickpea based hummus.
Ingredients
- 2 roasted beets
- 1 can garbanzo beans
- 1 tsp. cumin
- juice of 2 lemons
- 2 Tbs. tahini
- 2 cloves garlic, minced
- 1/3 c. olive oil
Directions
Put all ingredients in food processor & serve!
