Green Bean Fries with Yogurt Dill Dip

Recipe (with slight amendments) from True Roots

Ingredients 

Green Bean Fries

  • 2 Tbs. olive oil
  • 1lb. fresh green beans, ends trimmed
  • 2 large egg yolks
  • 1/4 cup whole wheat flour
  • 1/4 cup grated Manchego cheese
  • Salt & Pepper
  • 1 tsp. garlic powder
  • 1 tsp. paprika

Yogurt Dill Dip

  • 1 cup greek yogurt
  • 1/4 cup vegan mayonaise
  • 1/4 cup chopped dill
  • 1/2 tsp. garlic powder
  • 1 Tbs. lemon juice
  • salt & pepper

Directions

Green Bean Fries

  1. Preheat oven to 425° F. Line baking sheets with aluminum foil, and drizzle with olive oil
  2. Place green beans, egg yolks, and oil in bowl. Mix with hands until beans are evenly coated. Add the flour, cheese, salt, garlic powder, paprika, and pepper. Toss to coat.
  3. Spread green beans on lined baking sheet. Bake for 20-25 minutes. Until golden brown.

(While the fries are cooking, prepare the yogurt dill dip)

Yogurt Dill Dip

  1. In small bowl, whisk together yogurt, mayo, dill, & garlic powder, lemon juice, salt & pepper.
  2. Place in refrigerator until fries are done baking. Use for dipping.
