It’s Memorial Day weekend, which means we’ve got 3 mornings to wake up at whatever time we want and make some tasty breakfast! I can’t think of a better combination than waffles, Nutella and bananas. This recipe has bananas in the batter and as a topping. Sometimes bananas make batters a strange consistency, but this one works really well. Feel free to add any extra toppings you want to this recipe, like almonds in the batter, or even ice cream on top of your waffles. Happy waffle making! (You need a waffle maker for these, I have this one.)
Ingredients
Belgian Waffle Batter
- 2 cups flour
- 1 Tbs. baking powder
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 1 banana, mashed
- 1 1/2 cups almond milk
- 3 Tbs. brandy
- 1/4 c. olive oil
- 2 eggs
- 1 Tbs. vanilla extract
Banana Topping
- 2 bananas, sliced
- 2 Tbs. Brandy
- 2 Tbs. maple syrup
- 4 Tbs. brown sugar
- 1 tsp. olive oil
Nutella Topping
- 5 Tbs. Nutella
Directions
- Make the batter. Combine dry ingredients – flour, baking powder, cinnamon and salt in small bowl. Mix to combine.
- In a separate bowl, add the wet ingredients – banana, almond milk, brandy, olive oil, eggs, and vanilla extract.
- Combine wet and dry ingredients. Mix until batter comes together in smooth consistency. Don’t over-mix.
- Pour batter into waffle maker and cook according to waffle maker instructions.
- While the waffles are cooking, make the banana topping. Put bananas, brandy, maple syrup, brown sugar and olive oil into pan. Fry until wet ingredients form a liquid consistency and caramelize the bananas.
- Plate the waffles, and spread desired amount of Nutella on waffles. Pour the caramelized banana mixture over the top. Be sure to use the caramel on the bottom of the pan.
- Finally, add desired amount of maple syrup. Enjoy. 🙂
