Chocolate Chip Espresso Cookies

If you need a double chocolate, coffee flavored cookie, this is the recipe for you. The best ingredient in this batter is the espresso powder. It adds a coffee taste to the cookies that separates this from your typical classic chocolate chip cookie batch. Fair warning, there’s a lot of butter in this recipe. These savory cookies are great for a cold winter day.

Ingredients

Wet Ingredients

  • 1 cup Irish butter, softened
  • 1 1/4 cup brown sugar
  • ​1/4 cup coconut sugar
  • 2 eggs
  • 2 tsp pure vanilla extract
  • 2 Tbsp espresso powder

Dry Ingredients

  • 1/2 cup cocoa powder
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tbsp cornstarch
  • 1/2 tsp salt
  • 1 cup milk chocolate chips
  • 1.2 cup cup dark chocolate block, chopped

Directions

  1. Preheat oven to 350ΒΊ
  2. Line 2 baking sheets with parchment paper
  3. In a large bowl, combine wet ingredients – Butter, brown sugar, coconut sugar, 2 eggs, vanilla extract, and espresso powder. Mix until creamy
  4. Combine dry ingredients in another bowl – Cocoa powder, flour, baking soda, cornstarch, salt, milk and dark chocolate. Mix until all ingredients are evenly distributed
  5. Slowly add dry ingredients into wet ingredient bowl. Mix until cookie dough creates a smooth & even texture
  6. Scoop batter into 1 Tbs. size dollops onto parchment-lined baking sheets. Keep cookies 2 inches apart
  7. Bake for 10-12 minutes, until the chocolate pieces are melted
