If you need a double chocolate, coffee flavored cookie, this is the recipe for you. The best ingredient in this batter is the espresso powder. It adds a coffee taste to the cookies that separates this from your typical classic chocolate chip cookie batch. Fair warning, there’s a lot of butter in this recipe. These savory cookies are great for a cold winter day.
Ingredients
Wet Ingredients
- 1 cup Irish butter, softened
- 1 1/4 cup brown sugar
- β1/4 cup coconut sugar
- 2 eggs
- 2 tsp pure vanilla extract
- 2 Tbsp espresso powder
Dry Ingredients
- 1/2 cup cocoa powder
- 2 cups all purpose flour
- 1 tsp baking soda
- 1/2 tbsp cornstarch
- 1/2 tsp salt
- 1 cup milk chocolate chips
- 1.2 cup cup dark chocolate block, chopped
Directions
- Preheat oven to 350ΒΊ
- Line 2 baking sheets with parchment paper
- In a large bowl, combine wet ingredients – Butter, brown sugar, coconut sugar, 2 eggs, vanilla extract, and espresso powder. Mix until creamy
- Combine dry ingredients in another bowl – Cocoa powder, flour, baking soda, cornstarch, salt, milk and dark chocolate. Mix until all ingredients are evenly distributed
- Slowly add dry ingredients into wet ingredient bowl. Mix until cookie dough creates a smooth & even texture
- Scoop batter into 1 Tbs. size dollops onto parchment-lined baking sheets. Keep cookies 2 inches apart
- Bake for 10-12 minutes, until the chocolate pieces are melted
